Baking Gingerbread Men

Today is Elf Day, a fundraising day created by the Alzheimer’s Society. For the occasion I baked some festive gingerbread men to take round to my work colleagues whilst donning an elf hat! The recipe is so easy to follow and makes some super tasty gingerbread men! For the gingerbread dough you will need:

  • 350g plain flour
  • 1tsp baking powder
  • 2tsp ground ginger (this can be added depending on preference. I personally added 2 and a half in the end!)
  • 1tsp ground cinnamon
  • 125g unsalted butter
  • 175g soft light brown sugar
  • 1 large egg
  • 4tbsp golden syrup

For decoration you will need

  • Cookie cutters
  • Decorative items of your choice

To make the gingerbread you should follow the following method:

In a large mixing bowl sift in the flour, baking powder, ginger and cinnamon. Once sifted and lightly mixed together, add the butter. Mix together until it resembles breadcrumbs and then add the sugar.

In a separate small bowl, add the egg to the golden syrup and beat. Once all mixed add to the mixture in the large bowl. Mix together until a dough is formed. Wrap the dough in clingfilm and place in the fridge for around 20-30 minutes.

Line a baking tray with baking paper and preheat the oven to 160C. Take the dough from the fridge and on a floured surface roll to an even thickness.

Take your cutters and cut away placing on the baking tray.

Pop them in over for around 10/15 minutes until golden brown.

Once they’re out, place on a wire rack to cool completely. Once cool, decorate to your hearts desire!
